For the choux pastry:

  9. Pipe small mounds onto a baking sheet lined with parchment paper, leaving enough space between them for the profiteroles to expand.
  10. Bake in a preheated 400°F oven for 15 minutes. Reduce the temperature to 350°F and continue baking for another 15 to 20 minutes, until puffed and deeply golden.
  11. Turn off the oven and leave the profiteroles inside for about 5 minutes with the oven door slightly open. This helps prevent them from collapsing too quickly.
  12. Remove them from the oven and let them cool completely on a wire rack.
  13. Transfer the dulce de leche to a piping bag fitted with a small tip.
  14. Make a small hole in the bottom or side of each profiterole and pipe in a generous amount of dulce de leche.
  15. You can also slice the profiteroles in half and pipe the filling inside if you prefer the dulce de leche to be visible.
  16. Finish with a light dusting of powdered sugar before serving.
